Fattet Humus - traditional Damascene Chickpea Fatteh
Ingredients: 2 cans cooked chickpeas, 2 pita bread loaves-cut into small pieces, 2 tsp minced garlic, 1-2 tsp salt, 3 tsp ground cumin, and 1/2 cup REGULAR olive oil. Bring chickpeas to a boil, add salt to taste, 1 tsp garlic, and mix. Add more water if needed. Place bread pieces in a serving bowl, then mix with 1 tsp garlic. In a blender, place oil and 2-3 cups of chickpeas water. Cover and apply pressure to the blender cover with a towel on, to prevent splashing while blending due to vapor pressure in the blender. Mix chickpeas with bread, then pour milky liquid from the blender on top. Sprinkle cumin on top and serve. Enjoy!
