Raz wa Ful - Lamb & Rice with Green Fava Beans Ingredients: 2 cups fava beans, 3 cups short grain rice, rinsed and drained, 1/2 lb ground meat, 4&1/2 cups water for cooking rice, 5 Tbs oil, 2 tsp salt, 1 tsp black pepper, 1 tsp cinnamon, 1 tsp nutmeg (optional) and 1 TBS sugar. To begin, if using frozen fava beans, boil them in water mixed with sugar for about 5-10 min, then drain. Heat the oil in a pan and cook the meat for about 5 min. Add salt and pepper. Add rice, cinnamon, nutmeg, and stir, then add the fava beans. Add the water & bring to a boil. Cover and cook for about 20 min on medium low heat. Spoon the rice into a serving plate. Garnish with toasted pine nuts and serve with plain yogurt and your favorite salad. Enjoy!
