محسن العجين (٣/٤ كوب ماء+١/٣ كوب طحين)
٥ اكواب طحين متعدد الاستعمالات
ملعقة زبدة او سمنه لينه
قبل الخبز للتلميع:
بيضة
ملعقتين كبار حليب سائل
نصف ملعقه ڤانيلا
سمسم محمص (نرشه بعد التلميع)
بعد الخبز:
قطر
جوز هند (اختباري)
الحشوة:
معجون التمر
ملعقة صغيره قرفة مطحونة
ملعقة كبيرة زبدة او سمنة لينة
- نحضر محسن العجين بالاول، نخلط الطحين والعجين على البارد ثم نطبخه على نار هاديه لحد ما يتكون عنا خليط ثقيل ومطاطي، نتركه ليبرد على جنب ونبدأ بتحضير الحشوة والعجين
- نخلط مكونات الحشوة باليد ونشكل التمر على شكل اصابع (خمل الاصبع حسب الرغبة)
- نخلط مكونات المرحلة الاولى ونغطي الطبق وننتظر ١٠ دقائق لتتفاعل الخميره
- نضيف مكونات المرحله الثانيه الرطبة ثم الجافه ثم محسن العجين ونعجن جيدا لمدة دقيقتين (نضيف الزبده او السمنه بعد دقيقه من العجن لتليين العجين)
- ندهن طبق بالقليل من الزيت بواسطة اليدين ونضع العجين في الطبق، نغطي الطبق ونخمر العجين بمكان دافئ لمدة ساعة
- نقطع العجين الى ٨ كور متساوية الحجم ونضعهم على سطح مرشوش بالطحين، نغطي العجين لكي لا تنشف
- نفرد العجين بالطول ونضع اصبع التمر ثم نثني العجين على اصبع التمر ، نقوم بصنع فتحات بما تبقى من العجين ونكمل ثني العجين الى ان نوصل الى الاخيرة
- نشكل العجين على شكل دائرة، ممكن ان نسكرها او ندعها مفتوحه
- نضع المعروك على صينية مفروشه ورق خبز
- نخلط مكونات خليط التلميع وندهن العجين قبل الخبز ثم نرش السمسم
- نريح المعروك ربع ساعة قبل الخبيز
- نخبز المعروك في الفرن على اخر رف على درجة حرارة ٤٠٠ الى ان يصبح لونه ذهبي (١٥-٢٠ دقيقة)
- ندهن المعروك بالقطر ونرش جوز الهند
Maarouk with dates @palibites
The first stage
1 cup warm milk
1 tbsp sugar
1 tbsp instant yeast
1 tbsp flour
The second stage
1/2 cup sugar
1/4 cup vegetable oil
1 egg
1 tsp vanilla
1/4 cup plain yogurt
1 tsp of baking powder
1/2 tsp salt
1 tsp mahlab or ground fennel seeds
1 tsp ground anise seeds
Roux (3/4 cup water + 1/3 cup flour)
5 cups of all-purpose flour
1 tbsp of butter or soft ghee
Before baking to polish:
1 egg
2 tbsp milk
1/2 tsp vanilla
After baking:
simple syrup
coconut flakes (optional)
Filling:
date paste
1 tsp ground cinnamon
1 tbsp soft butter or ghee
-prepare the roux first, mix the flour and the water while cold, then cook it on medium heat until it forms a thick and rubbery mixture, leave it to cool on the side
- Mix the ingredients of the filling by hand and form the dates in the shape of thick long fingers (fingers thickness as desired)
- mix the ingredients of the first stage, cover the bowl and wait 10 minutes for the yeast to react
- Add the wet and dry ingredients of the second stage, then the roux and knead well for two minutes (add the butter or ghee after a minute of kneading to soften the dough)
- spread a little oil by hands in a bowl
and place the dough in it. cover the bowl and let it rest in a warm place for an hour
- Cut the dough into 8 balls of equal size and place them on a floured surface, covering the dough so that it does not dry out.
- roll out each ball to an oval shape then place the date finger on one side. Fold that end of the dough on the date finger, using a knife or a pizza cutter make long cuts in the rest of the dough, continue to fold the dough until you reach the end
- bend the dough and shape it like a circle
- place the maarouk on a tray lined with parchment paper
- Mix the ingredients of the polishing mixture and brush it on the maarouk before baking, then sprinkle with sesame seeds
- cover and rest the marouk 15 minutes before baking
- Bake the maarouk in the oven on the last shelf at 400 degrees until it turns golden (15-20 minutes).
- brush it with simple syrup and sprinkle with coconut flakes if desired
