This is the famous Maharashtrian recipe, Kothimbir Vadi (Fresh Coriander leaves fritters). It is prepared with Kothimbir (Kothimbir is Marathi word and it means Coriander Leaves) and besan, the leaves and the spices are steamed first like dhokla and then made into crispy hot wedges. Its a perfect evening snack that can be served with green chutney and typical Indian Masala tea.
Ingredients for Kothambir Vadi
Besan (gram flour)– 1 cup
Fresh Coriander Leaves – 1 Cup
Oil- for deep fry
Rice flour – 3 tbsp
Lemon - one
Green Chilli – 2 (finely chopped)
Sesame seeds (til) – 2 tsp
Oil – 2 tbsp
Ginger garlic paste – 2 tsp
Red chilli powder- 1 tsp
Turmeric powder- ½ tsp
Salt – to taste
Cummin seeds (jeera) powder – ½ tsp
Baking powder – ½ tsp
