Molokhiya (Mloukhieh) with Chicken, Mloukhieh Lebanese style (Jew Mellow) Mloukhieh, Jew Mallow, Egyptian Spinach (Corchonus Olitorius) are names given to this plant that is very popular throughout the Middle East #ClaudettesKitchen
It is said that the name Molokhia is derived from the Arabic word “Mulukia” meaning ‘Royal’ and is known to be one of the favorite foods of the Pharaohs in Ancient Egypt. Today, it is considered a traditional dish in several countries in the region, and is prepared is different ways depending on the country. My favorite, which is no surprise, is the Lebanese style. It is full of healthy nutrients.
Ingredients:
- 1.5 Kg chicken
- 2 Liters water
- 1 teaspoon salt
- When a white layer appear remove it, then turn on low heat
- 1 Cinnamon stick
- 5 Bay leaves
- Cook on Low heat for 30 minutes, or until the chicken is cooked, once done let the chicken cool down
- 6 Lemons juice
- 120 gr. Minced Garlics
- Bunch of Coriander (freeze or fresh) as you like
- 700gr. chopped Mloukhieh (freeze or fresh) as you like
- Cook on medium heat for 10 minutes
- When the chicken has cooled down separate the bones from the meat
- 3 Cups Rice
- 8 cups water
- Cook on medium heat, when boils turn on low heat
- 2 teaspoons salt
- 3 Onions chopped into small cubes
- 1 Liter Apple Vinegar
- When circles appear, and the water has evaporated, turn off the heat.
