How to make Milk Toffee srilankansweets milktoffee

This is recipe of delicious cardamom flavored soft toffee that is very popular in Sri Lanka and in my house. After many requests I’ve finally posted my recipe. To make approx 24 pieces INGREDIENTS * 1 full can sweetened condensed milk * 400g sugar * 1 tablespoon butter * Water- enough to fill half of can * 10 cashews (crushed) * 1/4 tsp cardamom pods METHOD 1. Grease a flat plate/tray and keep aside. 2. On a low heat add the full can of condensed milk into a heavy bottom pan. 3. Fill water half way of the empty can and dilute the rest of milk, so nothing is wasted. Pour this into the pan. 4. Add sugar and stir together slowly. 5. Add cardamom pods and stir. 6. When milk starts to boil add cashew and keep stirring frequently. 7. Once you see the milk start to bubble add butter and keep stirring. 8. Milk will start to thicken and change colour, make sure sides of pan does not burn. 9. At this stage if you remove it then it will be like chewy toffee and not milk toffee. So wait for the colour to change a little darker (just under a minute). 10. The mixture will separate from the pan. 11. Remove from heat and transfer to greased plate. 12. Flatten with back of a spoon. 13. Leave for about 2 minutes and it should start to set. 14. Cut into small squares. TIPS: - Use a plate/tray that has a bit of depth instead of a flat one to give you equal thickness. - No need to roast cashews. - Do not let milk to completely set as it will be difficult to cut using knife, it’s best to cut into when warm. - If you let caramel simmer for too long you will end up with a hard mass. - The pan will be difficult to wash afterwards so fill it with water and bring to boil (this will help the caramel to melt off). Now you can wash easily. You can store these in an airtight container for at least a month - that’s if they don’t get eaten before that!!!
